Favorite Recipe: Ginger Lime Asian Slaw

Ever since I read about cabbage as a superfood back in May, we have been buying cabbage regularly. Some favorite recipes we started with can be found on my Lifestyle blog (currently on a little vacation, but lots of good prior stuff to read).

My latest favorite is a great summer slaw I found on Pinterest. The combination of fresh ginger and lime in the dressing adds just enough pop to your taste buds in every bite. Enjoy!


Ginger Lime Asian Slaw (adapted from realfoodrealdeals)

Ingredients

  • 8 cups Napa cabbage, thinly sliced
  • 3 carrots, grated
  • 2 apples, peeled and grated
  • ½ tsp. salt
  • 1 tbs. lime juice
  • 2 tbs. olive oil, divided
  • 1 tbs. minced onion
  • 1 tbs. minced fresh ginger
  • 1 tbs. honey
  • 2 tbs. rice vinegar

Instructions

Combine the cabbage, carrots, apple, salt, and lime juice in a large bowl.

In a medium skillet, cook the minced onion in 1 tablespoon of olive oil for 5 minutes. Add the ginger and cook for an additional 30 seconds.

In a jar, mix the remaining tablespoon of olive oil with the honey and rice vinegar. Add the veggies from pan.

Pour the dressing over the cabbage mixture and mix well. Refrigerate for an hour before serving
